Here’s a favorite recipe given to me by a lawyer friend many years ago when we live in the beautiful state of New Mexico. It is delicious, practically foolproof, and a treat to serve guest. Enjoy.
FRESH APPLE CAKE
Preheat & bake at 350º. Grease and flour pan.
1¼ cups vegetable oil 3 cups All-Purpose flour
2 cups sugar 1 teaspoon soda
3 eggs ½ teaspoon salt
1 teaspoon vanilla 1 teaspoon cinnamon
3 cups diced apples (Jonathans, Granny Smiths are good)
1¼ cups of chopped pecans
Mix ingredients at left. Add dry ingredients. Blend in apples and nuts. Baking time: 1 hour in flat pan. 1½ in Bundt pan. Check for doneness with clean knife or skewer after cake starts to look done.
Cool completely. Goes well with fresh whipped cream.
